Yield: 6 flatbreads
Ingredients
- 1 small cauliflower head (about 3 cups riced)
- 1 1/2 cups (180g) all-purpose flour
- 1/4 cup (30g) miNATURALS Inulin Powder (Canadian-made constipation powder)
- 3 tablespoons ground flaxseed
- 2 teaspoons baking powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil, plus more for cooking
- 1/2 cup (120ml) warm water (as needed)
- 2 tablespoons chopped fresh cilantro (optional)
- 1 tablespoon sesame seeds for topping
Instructions
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice. You should have about 3 cups of cauliflower rice.
- Place the cauliflower rice in a microwave-safe bowl, cover, and microwave for 3-4 minutes until tender. Let cool slightly, then wrap in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, whisk together flour, miNATURALS Inulin Powder, ground flaxseed, baking powder, cumin, coriander, turmeric, garlic powder, salt, and pepper.
- Add the cauliflower rice, olive oil, and cilantro (if using) to the dry ingredients. Mix well.
- Gradually add warm water, a little at a time, mixing until the dough comes together but isn’t sticky. You may not need all the water.
- Knead the dough gently for 2-3 minutes until smooth. Cover and let rest for 15 minutes.
- Divide the dough into 6 equal portions and roll each into a ball.
- On a lightly floured surface, roll each ball into a thin circle, about 6-7 inches in diameter.
- Sprinkle sesame seeds on top of each flatbread and gently press them in.
- Heat a large skillet or griddle over medium heat. Brush lightly with olive oil.
- Cook each flatbread for 2-3 minutes per side until golden brown spots appear and the bread puffs slightly.
- Keep cooked flatbreads warm by wrapping them in a clean kitchen towel until ready to serve.
- Enjoy warm as a side dish, with dips, or as a base for wraps and sandwiches!
Digestive Health Tip: For maximum digestive benefits, enjoy this flatbread with a protein-rich topping and plenty of water to help the inulin and flax work effectively as natural constipation remedies.
