Portable Nutrition with Delicious Appeal

These Banana Nut High-Fiber Bars represent the perfect intersection of convenience and nutrition—chewy, satisfying, and naturally sweet while delivering impressive digestive benefits. Unlike commercial fibre rich bars that often taste artificial or overly processed, these homemade treats harness the natural goodness of ripe bananas, hearty oats, and nutrient-dense nuts. Enhanced with miNATURALS Inulin Powder, these fibre rich bars provide sustained energy and gentle digestive support in a portable format. Perfect for breakfast on busy mornings, post-workout recovery, or a mindful snack, they prove that fibre rich bars can be genuinely delicious while supporting overall wellness.

Ingredients:

  • 3 ripe bananas, mashed
  • 2 cups rolled oats
  • ½ cup oat flour (blend rolled oats in a food processor)
  • 2 tablespoons miNATURALS Inulin Powder
  • 2 tablespoons ground flaxseed
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • ⅓ cup maple syrup or honey
  • ¼ cup almond butter or peanut butter
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • ⅔ cup chopped walnuts or pecans
  • ¼ cup pumpkin seeds
  • ¼ cup dried cranberries or raisins (optional)
  • 2 tablespoons hemp seeds (optional)

Instructions:

Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal. In a large bowl, mash the ripe bananas until smooth. The natural sweetness and binding properties of bananas are essential for creating fibre rich bars with perfect texture and minimal added sweeteners.

Add the rolled oats, oat flour, miNATURALS Inulin Powder, ground flaxseed, cinnamon, nutmeg, and salt to the mashed bananas. Unlike many commercial fibre rich bars that rely on processed fiber additives, this recipe uses whole food sources that provide a variety of fiber types for optimal digestive benefits.

In a small saucepan or microwave-safe bowl, warm the maple syrup, nut butter, and coconut oil until just melted and easy to stir. Add the vanilla extract and whisk until smooth. This warm mixture helps to evenly distribute the sweetness and healthy fats throughout the fibre rich bars.

Pour the liquid ingredients over the banana-oat mixture and stir until well combined. Fold in the chopped nuts, pumpkin seeds, dried fruit if using, and hemp seeds if using. The variety of seeds and nuts not only adds texture and flavor but contributes additional fiber and nutrients that make these bars truly exceptional among fibre rich bars.

Press the mixture firmly and evenly into the prepared baking pan. Use the back of a spatula or wet hands to compact the mixture—this ensures your fibre rich bars will hold together perfectly when cut.

Bake for 25-30 minutes until the edges are golden brown and the top feels set. Unlike many fibre rich bars that require no baking (and often fall apart), this brief baking time creates bars with perfect texture and enhanced flavor.

Allow the bars to cool completely in the pan before using the parchment overhang to lift them out and cut into 12-16 bars. This cooling period is crucial for fibre rich bars, as it allows the structure to set properly while the fibers continue to bind together.

These Banana Nut High-Fiber Bars showcase how delicious homemade fibre rich bars can be—store in an airtight container at room temperature for up to 3 days, refrigerate for up to a week, or freeze individually wrapped bars for up to 3 months for a nutritious snack that’s always ready when you need it.
